Ingredients
- 1½ lb Chicken Thighs
- ½ cup soy sauce
- ⅓ cup cane or white vinegar
- 1 whole head garlic, smashed
- 3 bay leaves
- 1 tbsp whole peppercorns
- 1 tbsp brown sugar
- Garlic rice, to serve
Method
- Brown the Chicken Thighs in a little oil, then add soy sauce, vinegar, garlic, bay, peppercorns, and sugar with a splash of water.
- Simmer uncovered — and resist stirring for the first few minutes so the vinegar's raw edge cooks off — for 35–40 minutes until the Chicken Thighs is tender and the sauce is glossy and reduced.
- For extra depth, fish out the Chicken Thighs and crisp it under the broiler, then return to the sauce.
- Spoon over garlic rice, making sure everyone gets some of those soft, sweet garlic cloves.
