  1. Bloom the cumin seeds in hot oil until they sputter, then soften the onion, garlic, and ginger.
  2. Add turmeric and the potatoes and cauliflower, tossing to coat, then the tomato. Cover and cook low, stirring occasionally, 18–20 minutes until tender.
  3. Uncover and let the edges catch and brown for real flavor; sprinkle in the garam masala at the end so it stays fragrant.
  4. Finish with cilantro and serve with rice or roti.
