Ingredients
- 1 head cauliflower, florets
- 2 potatoes, cubed
- 1 onion + 3 cloves garlic + 1-inch ginger
- 1 tsp cumin seeds + 1 tsp turmeric + 1 tsp garam masala
- 1 tomato, diced
- 3 tbsp oil or ghee
- Cilantro, rice or roti
Method
- Bloom the cumin seeds in hot oil until they sputter, then soften the onion, garlic, and ginger.
- Add turmeric and the potatoes and cauliflower, tossing to coat, then the tomato. Cover and cook low, stirring occasionally, 18–20 minutes until tender.
- Uncover and let the edges catch and brown for real flavor; sprinkle in the garam masala at the end so it stays fragrant.
- Finish with cilantro and serve with rice or roti.
