Ingredients
- 1 lb Cod, cooked and flaked (salt cod if you planned ahead; fresh works tonight)
- 3 cups shoestring potato sticks (or matchstick-fried potatoes)
- 5 eggs, loosely beaten
- 1 onion, sliced thin
- 3 cloves garlic
- ⅓ cup olive oil
- Black olives + parsley
- Black pepper
Method
- Soften the onion and garlic in the olive oil until sweet and gold, 6 minutes.
- Fold in the flaked Cod to warm through.
- Add the potato sticks and toss briefly — they should stay half-crisp; total surrender is for lesser dishes.
- Pour the eggs over and fold gently OFF and ON the heat until barely set and creamy — à Brás is scrambled silk, not omelette.
- Finish with olives, parsley, and pepper. Portugal's most beloved cod dish; the fish is flexible, the creamy-crispy contract is not.
