Ingredients
- 3 very ripe bananas (black-spotted is perfect)
- 1 cup flour
- 1 egg
- ¼ cup milk
- 2 tbsp brown sugar
- 1 tsp cinnamon + ¼ tsp nutmeg + ½ tsp vanilla
- 1 tsp baking powder
- Oil or butter, for frying
- Powdered sugar or honey
Method
- Mash the bananas into pulp — ripeness is the recipe; those black spots are pre-loaded caramel.
- Stir in the egg, milk, sugar, vanilla, and spices, then the flour and baking powder just until combined.
- Fry generous spoonfuls in a little oil over medium, 2–3 minutes per side, until deep golden with crisp lace edges.
- Drain briefly on a rack — they should stay custardy inside.
- Dust with powdered sugar or drip with honey, and serve warm. From Jamaica to Trinidad, this is what happens to bananas that waited too long — promotion.
