Ingredients
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 ripe banana, mashed
- 1 egg
- ¾ cup milk or buttermilk
- 3 tbsp butter
- Pinch of salt
- Maple syrup, to serve
Method
- Brown 2 tablespoons of the butter in a small pan until it smells like toasted hazelnuts; let it cool slightly.
- Whisk the dry ingredients. In another bowl, whisk banana, egg, milk, and the brown butter. Fold wet into dry until *just* combined — lumps are friends, gluten is not.
- Heat a nonstick pan over medium with a little butter. Ladle ¼-cup pancakes and cook until bubbles pop and stay open, about 2 minutes; flip and give them 1–2 more.
- Stack, syrup, no regrets.
