  1. Brown 2 tablespoons of the butter in a small pan until it smells like toasted hazelnuts; let it cool slightly.
  2. Whisk the dry ingredients. In another bowl, whisk banana, egg, milk, and the brown butter. Fold wet into dry until *just* combined — lumps are friends, gluten is not.
  3. Heat a nonstick pan over medium with a little butter. Ladle ¼-cup pancakes and cook until bubbles pop and stay open, about 2 minutes; flip and give them 1–2 more.
