Ingredients
- 2 cans (15 oz) black beans, drained
- 3 cups Sweet Potato, small dice
- 1 onion, diced
- 2 tbsp neutral oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 cup salsa or crushed tomatoes
- 1 cup grated cheese
- Corn tortillas, charred
- Avocado, lime, cilantro
Method
- Brown the Sweet Potato and onion in oil over medium-high with a pinch of salt until tender and caramelized at the edges, 8–10 minutes.
- Add chili powder and cumin; toast 30 seconds. Stir in beans and salsa with a splash of water; simmer 5 minutes until saucy.
- Scatter the cheese over the top, lid on, 2 minutes until molten.
- Serve straight from the skillet with charred tortillas, avocado, lime, and cilantro. Spoons over forks.
