  1. Marinate the thin-sliced Steak in the soy, sugar, sesame oil, garlic, ginger, and grated pear for 20 minutes — the pear's enzymes tenderize and add sweetness.
  2. Get a pan or grill screaming hot and cook the Steak in a single layer, in batches, so it sears and caramelizes instead of steaming.
  3. Add the onion for the last minute just to soften.
  4. Serve over rice with sesame and scallion, or wrap in lettuce leaves ssam-style.
