Braaibroodjies — Braai-Grilled Cheese & Onion Sandwiches

Method

  1. Butter one side of every slice — the outside faces — right to the corners. Skimping here gives you pale patches and sad edges.
  2. Spread chutney on the dry sides of four slices, then layer cheese, onion, Tomatoes, salt, and a heavy grind of pepper. Top with the remaining slices, buttered side out.
  3. Clamp the sandwiches in a hinged grid or press them flat in a heavy pan. If you're on a braai, wait until the coals are past their peak and glowing grey — flames will torch the bread before the cheese moves.
  4. Grill 4–5 minutes a side, turning often and pressing gently, until both faces are evenly toasted and the cheese runs when you tilt the sandwich.
  5. Rest 1 minute, cut on the diagonal, and eat standing next to the fire like everyone else.
