Braaibroodjies — Braai-Grilled Cheese & Onion Sandwiches

Ingredients
- 8 slices white sandwich bread
- 6 oz mature cheddar, grated
- 1 onion, sliced paper-thin
- 2 Tomatoes, sliced thin
- 4 tbsp softened butter
- 2 tbsp fruit chutney
- 1 tsp black pepper
- Salt
Method
- Butter one side of every slice — the outside faces — right to the corners. Skimping here gives you pale patches and sad edges.
- Spread chutney on the dry sides of four slices, then layer cheese, onion, Tomatoes, salt, and a heavy grind of pepper. Top with the remaining slices, buttered side out.
- Clamp the sandwiches in a hinged grid or press them flat in a heavy pan. If you're on a braai, wait until the coals are past their peak and glowing grey — flames will torch the bread before the cheese moves.
- Grill 4–5 minutes a side, turning often and pressing gently, until both faces are evenly toasted and the cheese runs when you tilt the sandwich.
- Rest 1 minute, cut on the diagonal, and eat standing next to the fire like everyone else.
