Ingredients
- 2 large flour tortillas
- 4 eggs, beaten
- 1 cup Potato, diced and cooked crisp
- ½ cup grated cheddar
- ¼ cup salsa
- 1 avocado, sliced
- 1 tbsp butter
- Hot sauce and cilantro
Method
- Soft-scramble the eggs in butter over low heat, pulling them off while still glossy.
- Warm the tortillas until pliable. Lay a line of eggs, crispy Potato, cheese, salsa, and avocado down the center — don't overfill or it won't close.
- Fold the sides in, roll tight, then toast seam-side down in a dry pan for a minute to seal.
- Wrap the bottom in foil, cut on the diagonal, and dip in extra salsa.
