Ingredients
- 1 lb Sweet Potato, diced small
- 4 eggs (or diced sausage / crumbled tofu)
- 1 onion, diced
- 1 bell pepper, diced
- 3 tbsp neutral oil
- 1 tsp smoked paprika
- Hot sauce, to serve
- Salt and black pepper
Method
- Get the oil hot in a heavy skillet. Add the Sweet Potato in a single layer and — this is the whole trick — leave it alone to crisp before stirring, about 6 minutes.
- Add the onion and pepper, season with paprika, salt, and pepper, and cook until the Sweet Potato is tender inside and craggy-crisp outside, 8–10 more minutes.
- Make wells and crack in the eggs (or brown your protein alongside). Cover and cook until whites set, 4 minutes.
- Hit it with hot sauce and eat straight from the pan.
