  1. Get the oil hot in a heavy skillet. Add the Sweet Potato in a single layer and — this is the whole trick — leave it alone to crisp before stirring, about 6 minutes.
  2. Add the onion and pepper, season with paprika, salt, and pepper, and cook until the Sweet Potato is tender inside and craggy-crisp outside, 8–10 more minutes.
  3. Make wells and crack in the eggs (or brown your protein alongside). Cover and cook until whites set, 4 minutes.
  4. Hit it with hot sauce and eat straight from the pan.
