Soft-Scrambled Eggs Breakfast Tacos

Ingredients
- 4 eggs (or 7 oz crumbled tofu)
- 4 corn tortillas
- 1 tbsp butter
- 1 Avocado, sliced
- ¼ cup crumbled cotija or feta
- 2 tbsp salsa or hot sauce
- Handful cilantro
- 1 lime, in wedges
Method
- Warm the tortillas directly over a low flame or in a dry skillet until puffed and spotted; wrap in a towel to keep soft.
- Whisk the Eggs with a pinch of salt. Melt the butter in a nonstick pan over medium-low and add the Eggs, stirring slowly with a spatula in wide strokes.
- Pull the pan off the heat while the curds are still glossy — they finish cooking in their own heat. This takes 3 minutes, not 6.
- Pile into tortillas with Avocado, cheese, salsa, and cilantro. Squeeze lime over everything and serve immediately.
