  1. Warm the tortillas directly over a low flame or in a dry skillet until puffed and spotted; wrap in a towel to keep soft.
  2. Whisk the Eggs with a pinch of salt. Melt the butter in a nonstick pan over medium-low and add the Eggs, stirring slowly with a spatula in wide strokes.
  3. Pull the pan off the heat while the curds are still glossy — they finish cooking in their own heat. This takes 3 minutes, not 6.
  4. Pile into tortillas with Avocado, cheese, salsa, and cilantro. Squeeze lime over everything and serve immediately.
