Ingredients
- 1 lb Cod Fillets
- 1½ lb russet potatoes, cut into thick chips
- ½ cup flour
- 1 egg, beaten
- 1½ cups panko
- 1 tsp smoked paprika
- 1 cup frozen peas
- 1 tbsp butter and a squeeze of lemon
- 2 tbsp olive oil
- Salt, pepper, malt vinegar, and tartar sauce
Method
- Soak the chips in cold water 10 minutes, then dry thoroughly — dry potatoes crisp, wet ones steam. Toss with oil and salt and air-fry at 400°F (205°C) for 18–20 minutes, shaking twice.
- Season the Cod Fillets, then coat in flour, egg, and panko mixed with paprika, pressing the crumbs on firmly.
- Air-fry the Cod Fillets at 400°F (205°C) for 8–10 minutes until deep gold and flaking at 145°F — nestle alongside the chips if your basket allows.
- Simmer the peas 2 minutes, drain, and smash roughly with butter, lemon, salt, and pepper.
- Pile everything onto paper (newsprint optional), and hit the chips with malt vinegar while they're too hot to touch.
