Grilled Kippers with Buttered Toast

Ingredients
- 2 whole Kippers
- 4 tbsp butter
- 4 slices thick brown bread
- 1 lemon, halved
- 2 tbsp chopped parsley
- Black pepper
- Poached eggs, for serving (optional)
Method
- Heat the broiler and line a tray with foil. Lay the Kippers skin-side down and dot with half the butter.
- Broil 5–6 inches from the element for 5–6 minutes, without turning, until the flesh is hot, glossy, and lifts easily from the bones. Kippers are already cooked — you are only warming them and melting butter into them.
- Toast the bread and butter it while it is hot enough to melt the butter into the crumb.
- Squeeze half the lemon over the fish and scatter with parsley and pepper. Add no salt; the smoking did that.
- Serve with the toast, the rest of the lemon, and a poached egg if you want to turn breakfast into an event.
