Grilled Kippers with Buttered Toast

  1. Heat the broiler and line a tray with foil. Lay the Kippers skin-side down and dot with half the butter.
  2. Broil 5–6 inches from the element for 5–6 minutes, without turning, until the flesh is hot, glossy, and lifts easily from the bones. Kippers are already cooked — you are only warming them and melting butter into them.
  3. Toast the bread and butter it while it is hot enough to melt the butter into the crumb.
  4. Squeeze half the lemon over the fish and scatter with parsley and pepper. Add no salt; the smoking did that.
  5. Serve with the toast, the rest of the lemon, and a poached egg if you want to turn breakfast into an event.
