Bubur Lambuk — Spiced Beef Rice Porridge

Ingredients
- 1 cup jasmine rice, rinsed
- 10 oz Beef, finely diced
- 1½ cups Carrots, finely diced
- 9 cups beef stock
- 3 tbsp ghee
- 5 shallots, sliced
- 4 cloves garlic, minced
- 1 inch ginger, minced
- 1 stalk lemongrass, bruised
- 2 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tsp fennel powder
- 1 cinnamon stick
- 1 cup coconut milk
- ½ cup fried shallots and cilantro, to serve
Method
- Fry the shallots, garlic, ginger, lemongrass, and cinnamon in the ghee until soft and fragrant, 6 minutes. Add the ground spices and toast 1 minute.
- Add the Beef and brown it well, then the rice, stirring to coat every grain in the spiced ghee.
- Pour in the stock and bring to a boil, then reduce to low and cook 40 minutes, stirring every 10 minutes and scraping the bottom so it doesn't catch.
- Add the Carrots halfway through. When the rice has completely broken down and the porridge falls thickly off a spoon, stir in the coconut milk and warm through without boiling.
- Season generously — porridge needs more salt than you expect — and serve topped with fried shallots and cilantro.
