Method

  1. Fry the onion, garlic, and ginger, then bloom the curry powder, turmeric, and cinnamon in the oil until fragrant.
  2. Add the Chicken Thighs, tomatoes, potatoes, and water to cover; simmer 30 minutes until the Chicken Thighs is tender and the sauce is thick and rich.
  3. Hollow out half a loaf of bread to make a bowl (save the torn-out 'virgin' bread for dipping).
  4. Ladle the curry into the bread hollow, cap with the bread lid, and eat with your hands and plenty of cilantro.
