Durban Chicken Thighs Curry Bunny Chow

Ingredients
- 1½ lb Chicken Thighs
- 1 onion + 4 cloves garlic + 1-inch ginger
- 2 tbsp curry powder + 1 tsp turmeric + 1 cinnamon stick
- 2 potatoes, cubed
- 1 can (14 oz) tomatoes
- Half a loaf of soft white bread per person
- Cilantro
Method
- Fry the onion, garlic, and ginger, then bloom the curry powder, turmeric, and cinnamon in the oil until fragrant.
- Add the Chicken Thighs, tomatoes, potatoes, and water to cover; simmer 30 minutes until the Chicken Thighs is tender and the sauce is thick and rich.
- Hollow out half a loaf of bread to make a bowl (save the torn-out 'virgin' bread for dipping).
- Ladle the curry into the bread hollow, cap with the bread lid, and eat with your hands and plenty of cilantro.
