Ingredients
- 1¼ lb Cod Fillets, cut into 2-inch pieces
- 2 tbsp plain yogurt
- 1 tbsp fish sauce
- 2 tsp ground turmeric
- 1 tsp grated ginger
- 1 tsp grated galangal or extra ginger
- 3 tbsp neutral oil
- 1 large bunch dill, thick stems removed
- 4 scallions, cut into 2-inch lengths
- 6 oz rice vermicelli, cooked
- ¼ cup roasted peanuts, crushed
- Nước chấm or fish sauce with lime, for serving
Method
- Stir the yogurt, fish sauce, turmeric, ginger, and galangal into a golden paste. Coat the Cod Fillets and marinate 15 minutes — the yogurt tenderizes while the turmeric stains everything it touches, including your cutting board.
- Heat the oil in a large skillet over medium-high until shimmering. Lay in the Cod Fillets and cook undisturbed 3 minutes until the underside is burnished.
- Turn the pieces gently, then bury the pan in dill and scallions — it will look like too much. It is not. Toss for 2 minutes until the herbs slump and go glossy.
- Serve over vermicelli with crushed peanuts and a generous spoon of nước chấm. Eat while the dill still smells like a market at 7 a.m.
