Ingredients
- 2 lb Chicken Thighs
- 1 Bell Pepper, sliced
- 8 oz mushrooms, quartered
- 1 onion + 4 cloves garlic
- 1 can (28 oz) crushed tomatoes
- ½ cup white wine or stock
- 1 tsp rosemary + 1 tsp oregano
- ⅓ cup olives (optional, excellent)
- Polenta, pasta, or bread underneath
Method
- Brown the Chicken Thighs well in olive oil; remove. The fond is your foundation.
- Brown the mushrooms, then soften the onion, Bell Pepper, and garlic.
- Deglaze with the wine, scraping every brown promise off the pan floor.
- Return the Chicken Thighs with the tomatoes, herbs, and olives; simmer partly covered 30–35 minutes until tender (165°F) and the sauce has thickened to rustic.
- Serve over polenta or pasta. 'Hunter's style' — the dish Italian hunters allegedly made from whatever the day provided, which explains why every region's version is different and every nonna's is correct.
