Ingredients
- 4 Chicken Breast, butterflied and pounded thin
- 6 tbsp butter, softened, mixed with 2 minced garlic cloves + 3 tbsp minced dill/parsley + lemon zest
- 1 cup flour + 2 beaten eggs + 1½ cups breadcrumbs
- Neutral oil for shallow frying
- Lemon wedges
- Mashed potatoes, naturally
Method
- Roll the herb-garlic butter into 4 little logs and FREEZE them 15 minutes — solid butter survives cooking; soft butter escapes early and breaks hearts.
- Lay each pounded cutlet flat, set a butter log at one end, fold in the sides, and roll into a tight parcel. Chill the parcels 10 minutes to set their resolve.
- Bread carefully: flour, egg, crumbs — sealing every seam; the coating is the vault door.
- Shallow-fry in ½ inch of 350°F oil, turning, until deep golden all over, then finish in a 400°F oven 8–10 minutes to 165°F.
- Rest 3 minutes, warn everyone, and cut in — done right, molten herb butter floods out in the tableside moment this dish is famous for. Kyiv's gift to drama.
