Smoky Ground Beef Chili

Ingredients
- 1 lb Ground Beef
- 1 can kidney beans + 1 can black beans
- 1 can (28 oz) crushed tomatoes
- 1 onion + 1 bell pepper, diced
- 3 cloves garlic
- 2 tbsp chili powder, 1 tbsp cumin, 1 tsp smoked paprika, 1 chipotle
- 1 tsp cocoa powder (trust it)
- Cheddar, sour cream, scallion, lime
Method
- Brown the Ground Beef hard with the onion and pepper, letting it get some real color — that fond is flavor.
- Add garlic and all the spices plus the secret cocoa; toast 60 seconds until fragrant.
- Pour in the tomatoes and beans, season, and simmer partly covered for at least 30 minutes (longer is better), stirring now and then.
- Adjust with salt and a squeeze of lime to lift it, then serve with cheddar, sour cream, and scallion.
