Method

  1. Brown the Ground Beef hard with the onion and pepper, letting it get some real color — that fond is flavor.
  2. Add garlic and all the spices plus the secret cocoa; toast 60 seconds until fragrant.
  3. Pour in the tomatoes and beans, season, and simmer partly covered for at least 30 minutes (longer is better), stirring now and then.
  4. Adjust with salt and a squeeze of lime to lift it, then serve with cheddar, sour cream, and scallion.
