Ingredients
- ¾ cup jasmine rice
- 8 cups stock
- 8 oz Chicken Thighs
- 2-inch ginger, sliced
- Soy sauce + sesame oil
- Scallion, fried shallots, chili crisp, cilantro
Method
- Combine rice, stock, and ginger and simmer, stirring occasionally, 45–50 minutes until the grains burst into a silky porridge. More stirring makes it creamier.
- Poach the Chicken Thighs in the congee for the last 15 minutes, then shred it back in.
- Season gently with soy and sesame oil — congee should be mild and comforting, a canvas for toppings.
- Serve with scallion, fried shallots, cilantro, and as much chili crisp as your morning allows.
