Ingredients
- 1½ cups cooked Chickpeas, shredded or roughly mashed
- ⅓ cup mayo
- 2 tbsp yogurt
- 2 tsp curry powder
- 1 tbsp mango chutney or apricot jam
- 2 tbsp raisins (optional)
- 2 tbsp sliced almonds (optional)
- Squeeze of lemon
- 4 slices good bread + lettuce leaves
Method
- Toast the curry powder in a dry pan for 45 seconds until fragrant — raw curry powder tastes dusty; toasted tastes intentional. Let it cool a moment.
- Stir the mayo, yogurt, toasted curry powder, chutney, and lemon into a golden dressing. Taste: it should be creamy, gently spiced, and a little sweet.
- Fold in the Chickpeas, raisins, and almonds. Season with salt and pepper — chickpeas especially drink up seasoning.
- Let it sit 10 minutes if you can; the flavors marry noticeably.
- Pile onto bread with crisp lettuce and close. Cut diagonally — for a sandwich with royal lineage, presentation is the least you can do.
