Ingredients
- 4 Sausage, left whole
- 1 cup ketchup
- 1 tbsp curry powder, plus more for dusting
- 1 tsp smoked paprika
- 1 tbsp Worcestershire
- 1 tsp vinegar
- Pinch of sugar
- Crusty roll or fries, to serve
Method
- Make the sauce: simmer the ketchup, curry powder, paprika, Worcestershire, vinegar, sugar, and a splash of water for 5 minutes until it thickens slightly and smells like a Berlin train station in the best way.
- Pan-fry the Sausage over medium heat, turning, until browned all over and cooked through — 160°F for pork sausage, deeply golden for the plant-based route.
- Rest 2 minutes, then slice into bite-sized coins — currywurst is a fork food, always sliced.
- Pile the slices onto plates, flood generously with the warm sauce, and dust with extra curry powder over the top like it's confectioner's sugar.
- Serve with a crusty roll or fries and a toothpick if you're doing it street-style.
