Ingredients
- 1 cup red lentils, rinsed
- 1 onion, diced
- 3 cloves garlic + 1-inch ginger
- 1 tsp turmeric, 1 tsp cumin, ½ tsp chili
- ½ can coconut milk
- 3 tbsp ghee or coconut oil
- 1 tsp black mustard seeds + a few curry leaves (tarka)
- Cilantro, rice or naan, lime
Method
- Simmer the lentils with turmeric and 3 cups water until collapsed and soft, 20 minutes, skimming any foam.
- Meanwhile soften onion, garlic, and ginger in ghee with cumin and chili. Stir this into the lentils with the coconut milk and salt; loosen with water to a spoonable consistency.
- Make the tarka: sizzle mustard seeds and curry leaves in hot ghee until they pop, then pour the aromatic oil over the dal.
- Finish with lime and cilantro; serve over rice or with naan for scooping.
