  1. Simmer the lentils with turmeric and 3 cups water until collapsed and soft, 20 minutes, skimming any foam.
  2. Meanwhile soften onion, garlic, and ginger in ghee with cumin and chili. Stir this into the lentils with the coconut milk and salt; loosen with water to a spoonable consistency.
  3. Make the tarka: sizzle mustard seeds and curry leaves in hot ghee until they pop, then pour the aromatic oil over the dal.
  4. Finish with lime and cilantro; serve over rice or with naan for scooping.
