Ingredients
- 8 oz wheat noodles
- 8 oz Ground Pork
- 2 tbsp tahini or sesame paste + 2 tbsp soy + 1 tbsp chili oil (sauce)
- 1 tsp ground Sichuan peppercorn
- 2 cloves garlic + 1 tsp sugar
- Preserved mustard greens (optional)
- Scallion, crushed peanuts
Method
- Fry the Ground Pork hard until deeply browned and a little crisp, seasoned with a splash of soy.
- Whisk the sauce: sesame paste, soy, chili oil, garlic, sugar, and a splash of noodle water into a pourable, savory-nutty pool.
- Cook the noodles and pile them onto the sauce in each bowl (don't pre-toss — the drama is mixing at the table).
- Top with the crispy Ground Pork, Sichuan pepper, scallion, and crushed peanuts, then stir it all together.
