Dutch Baby — German Puffed Pancake

Ingredients
- 3 eggs, room temperature
- ⅔ cup flour
- ⅔ cup milk, warm-ish
- 1 tbsp sugar + pinch of salt + ½ tsp vanilla
- 3 tbsp butter
- Lemon and powdered sugar (classic), or berries
Method
- Put a 10-inch ovenproof skillet in the oven and heat to 425°F (220°C) — the screaming-hot pan is the launch pad.
- Blend the eggs, flour, milk, sugar, salt, and vanilla until completely smooth. Room-temp ingredients puff higher; cold ones sulk.
- Drop the butter into the hot skillet, swirl until foaming, and immediately pour in the batter.
- Bake 18–20 minutes WITHOUT opening the door — it will climb the walls into a golden crater landscape, then dramatically deflate at the table. Both acts are canon.
- Rush it out, squeeze lemon over, snow with powdered sugar, and carve. The German 'pfannkuchen' that emigrated, got a confusing name, and became a weekend legend.
