Wentelteefjes — Dutch Cinnamon Eggy Bread

Ingredients
- 6 slices day-old white bread
- 2 eggs
- ¾ cup milk
- 2 tbsp sugar
- 1½ tsp cinnamon
- ¼ tsp grated nutmeg
- 4 tbsp butter
- 2 tbsp brown sugar, for finishing
- Pinch of salt
Method
- Whisk the eggs, milk, sugar, half the cinnamon, nutmeg, and salt in a wide, shallow dish.
- Lay the bread in and soak 1 minute per side. Day-old bread drinks properly; fresh bread turns to pulp, which is why this recipe exists in the first place.
- Melt half the butter in a skillet over medium heat until it stops foaming.
- Fry the slices 3 minutes per side, until the surface is set and deep gold and the middle is soft but no longer wet. Add butter between batches.
- Mix the remaining cinnamon with the brown sugar and dust the hot slices heavily. Serve immediately, ideally with strong coffee and no plans.
