Ingredients
- 1 cup Yellow Split Peas, rinsed
- 1 red onion, minced
- 3 tbsp niter kibbeh or oil
- 4 cloves garlic, minced
- 1-inch piece ginger, minced
- 1 tsp ground turmeric
- 4 cups water, plus more as needed
- 1 jalapeño, sliced
- Salt
- Injera or rice, for serving
Method
- Simmer the Yellow Split Peas in the water, partly covered, skimming any foam, until beginning to soften, 25 minutes.
- Meanwhile cook the onion in niter kibbeh until translucent, then add garlic, ginger, and turmeric and fry 2 minutes until the kitchen turns gold.
- Scrape the onion mixture into the Yellow Split Peas and simmer 20 minutes more, stirring, until creamy and collapsed but not baby food.
- Season with salt and float the jalapeño on top for a fresh bite against all that mellowness.
- Serve warm; on a proper platter it sits proudly next to its spicier cousins.
