Ingredients
- 4 day-old everything bagels, torn into chunks
- 8 oz Breakfast Sausage
- 3 cups Spinach
- 1 cup Roasted Red Peppers, chopped
- 8 eggs
- 2½ cups whole milk
- 1½ cups shredded sharp cheddar
- 1 tbsp Dijon mustard
- 2 scallions, sliced
- 1 tbsp butter, for the dish
- Salt and black pepper
Method
- Brown the Breakfast Sausage in a skillet until cooked through, then wilt the Spinach in the drippings and let cool slightly.
- Butter a 9x13 baking dish and layer in the bagel chunks, Breakfast Sausage, Spinach, Roasted Red Peppers, and half the cheddar.
- Whisk the eggs, milk, mustard, 1 teaspoon salt, and pepper, and pour it evenly over everything. Press the bread down so it drinks — then cover and refrigerate 1 hour or up to overnight.
- Bake at 350°F (175°C) with the remaining cheddar on top, 45–50 minutes, until puffed, browned, and just set in the middle (a knife should come out clean).
- Rest 10 minutes, scatter with scallions, and slice into unapologetic squares.
