Ingredients
- 1 lb White Fish, in strips
- ½ cup flour + ½ cup cold sparkling water + 1 tsp paprika (batter)
- Neutral oil for shallow frying
- 8 corn tortillas
- 2 cups shredded cabbage + 1 lime + pinch salt (slaw)
- ½ cup mayo + 1 tbsp chipotle (crema)
- Cilantro and lime wedges
Method
- Toss the cabbage with lime and salt; let it soften while you fry.
- Whisk a thin batter from flour, cold sparkling water, paprika, and salt. Dip the White Fish and shallow-fry at 350°F until crisp and golden, 2–3 minutes. Drain on a rack.
- Stir the chipotle crema. Char the tortillas over a flame.
- Build: crema, fish, a tangle of slaw, cilantro, and a hard squeeze of lime. Two tortillas per taco for insurance.
