Ingredients
- 2 cans fava beans (or chickpeas), with liquid
- 3 cloves garlic, crushed
- 1 lemon, juiced
- 1 tsp cumin
- 3 tbsp olive oil
- 1 tomato, diced
- Parsley, chili, and warm pita
Method
- Warm the beans in their liquid with the cumin, then mash about half against the pot for a creamy-chunky texture.
- Off the heat, stir in the crushed garlic, lemon juice, and a big pinch of salt — brightness is everything here.
- Spoon into a bowl, make a well, and flood it with olive oil.
- Top with tomato, parsley, and chili, and scoop with warm pita.
