Full English Breakfast Traybake with Sausage
The fry-up, minus the four frying pans and the washing up.

Ingredients
- 6 Sausage, left whole
- 4 eggs
- 2 cups Mushroom, halved
- 2 Tomato, halved
- 1 can white beans, drained (baked beans if you're loyal)
- 2 tbsp olive oil
- 4 thick slices bread, for toast
- Salt and black pepper
Method
- Heat the oven to 425°F (220°C). Toss the Sausage, Mushroom, and Tomato on a big sheet pan with the oil, salt, and pepper. Roast 15 minutes.
- Pull the tray, turn the Sausage, and scrape a corner clear. Tip the beans into that corner — they'll warm and thicken alongside everything else.
- Make four wells among the vegetables and crack an egg into each. Season the eggs and return the tray to the oven.
- Bake 6–8 minutes more, until the whites are set but the yolks still wobble. Toast the bread while you wait.
- Serve straight off the tray with hot toast, strong tea, and no regrets. Brown sauce or ketchup — that argument is yours to have.
