Ingredients
- 6 corn tortillas
- 1½ cups grated melting cheese + crumbly cheese mix
- 1 tbsp butter
- Optional riders: leftover picadillo, beans, or avocado
- Lizano or Worcestershire, the Tico splash
Method
- Warm the tortillas on a dry griddle until soft and spotted.
- Load each with cheese while still on the heat; the bottom crisps as the cheese melts, 1–2 minutes.
- Add any riders — a spoonful of beans or picadillo turns a snack into lunch.
- Fold like small tacos and press briefly so the cheese welds them shut.
- Splash with Lizano and eat in twos and threes — 'gallitos' (little roosters) are how Costa Rica bridges any gap between meals. Simple, correct, gone.
