Ingredients
- 12 oz Ground Beef
- 2 tbsp gochujang
- 2 tbsp soy sauce
- 1 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 Cucumber, sliced thin and salted
- 2 cups cooked short-grain rice
- 1 tbsp toasted sesame oil
- 2 scallions + toasted sesame seeds
- 2 fried eggs (optional, correct)
Method
- Whisk gochujang, soy, honey, and vinegar. Salt the Cucumber slices lightly and let them sit — 10 minutes turns them into a quick pickle.
- Brown the Ground Beef hard in a hot pan, breaking it up or searing as appropriate. Add garlic for the final minute.
- Pour in the sauce and let it bubble, coating everything in a lacquered glaze, about 2 minutes.
- Build bowls: rice, glazed Ground Beef, pickled Cucumber, sesame oil, scallions, sesame seeds — and the fried egg you deserve.
