Method

  1. Cook the onions slowly in the fat until deeply soft and golden, 15 minutes — the melted onion is the body of the stew.
  2. Off the heat, stir in the paprika (it scorches fast), then the Beef, peppers, tomatoes, and caraway.
  3. Add stock to cover and simmer very gently, partly covered, 75 minutes until the Beef is spoon-tender and the broth is deep red.
  4. Serve with a swirl of sour cream over egg noodles or with crusty bread.
