Hungarian Beef Goulash

Ingredients
- 2 lb Beef, cubed
- 3 onions, sliced
- 3 tbsp sweet paprika + 1 tsp caraway
- 2 bell peppers + 2 tomatoes
- 3 tbsp lard or oil
- Stock to cover
- Sour cream, egg noodles or bread
Method
- Cook the onions slowly in the fat until deeply soft and golden, 15 minutes — the melted onion is the body of the stew.
- Off the heat, stir in the paprika (it scorches fast), then the Beef, peppers, tomatoes, and caraway.
- Add stock to cover and simmer very gently, partly covered, 75 minutes until the Beef is spoon-tender and the broth is deep red.
- Serve with a swirl of sour cream over egg noodles or with crusty bread.
