  1. Stir half the diced Cucumber into the yogurt with a pinch of salt and a little grated garlic if you like — a two-minute tzatziki.
  2. Toss the Halloumi with the olive oil, oregano, salt, and pepper. Sear in a hot skillet until golden and cooked through — halloumi wants 2 minutes a side, chicken more like 4–5.
  3. Toss the remaining Cucumber and the Tomato with the vinegar and a pinch of salt for a quick relish.
  4. Warm the pitas directly over a flame or in the empty hot pan until soft and puffed.
  5. Assemble: yogurt sauce down first, then the Halloumi, relish, red onion, and dill. Squeeze lemon over, fold, and eat over the wrapper like the street food it is.
