Greek Street Pitas with Halloumi

Ingredients
- 1 lb Halloumi
- 4 pita breads
- 1 cup thick yogurt
- 1 cup Cucumber, diced
- 1 Tomato, diced
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- 2 tbsp olive oil
- Red onion, thinly sliced, + fresh dill
- Lemon wedges
Method
- Stir half the diced Cucumber into the yogurt with a pinch of salt and a little grated garlic if you like — a two-minute tzatziki.
- Toss the Halloumi with the olive oil, oregano, salt, and pepper. Sear in a hot skillet until golden and cooked through — halloumi wants 2 minutes a side, chicken more like 4–5.
- Toss the remaining Cucumber and the Tomato with the vinegar and a pinch of salt for a quick relish.
- Warm the pitas directly over a flame or in the empty hot pan until soft and puffed.
- Assemble: yogurt sauce down first, then the Halloumi, relish, red onion, and dill. Squeeze lemon over, fold, and eat over the wrapper like the street food it is.
