Ingredients
- 2 lb bone-in Chicken Thighs
- 1½ cups jasmine rice
- 6 slices fresh ginger + 4 scallions + 6 cloves garlic
- 1 tbsp neutral oil or rendered chicken fat
- 1 cucumber, sliced
- Sauce 1: 2 tbsp soy sauce + 1 tsp sesame oil
- Sauce 2: 2 tbsp sriracha + 1 tbsp lime juice + 1 grated garlic clove

Method
- Poach the Chicken Thighs with half the ginger, 2 scallions, and 1 tablespoon salt in water to cover: bring to a bare simmer, then keep it at a shiver — never a boil — until cooked through (165°F at the bone), 25–30 minutes. Gentle heat is why the meat stays silk.
- Lift the chicken into ice water for 5 minutes — the shock sets that signature bouncy-tender skin. KEEP the poaching broth.
- The famous rice: sauté the garlic and remaining ginger (minced) in the oil until fragrant, add the rinsed rice and toast 1 minute, then cook it in 2¼ cups of the reserved broth instead of water.
- Stir both sauces together in their own little bowls — the chili-lime one is the table's loudest voice.
- Slice the chicken, fan over the rice with cucumber alongside, and moisten everything with a spoonful of hot broth. Serve the remaining broth in cups — nothing is wasted, everything is chicken.
