Za'atar Halloumi & Eggs Skillet

Ingredients
- 8 oz halloumi, in thick slabs
- 4 eggs
- 1 cup Cherry Tomatoes, halved
- 2 tbsp olive oil + 1 tbsp za'atar stirred together
- Warm pita
- Chili flakes, mint if handy
Method
- Sear the halloumi slabs in a dry skillet until golden-crusted both sides, 2 minutes each; push aside.
- Add the Cherry Tomatoes and blister 2 minutes.
- Crack the eggs into the gaps and cook to lacy-edged, runny-yolked.
- Spoon the za'atar oil over everything while the pan still talks.
- Serve in the skillet with pita for scooping. Salty cheese, soft yolk, herby oil — the Levantine breakfast triangle, complete in twelve minutes.
