North Shore Garlic Shrimp

Ingredients
- 1½ lb Shrimp
- 8 cloves garlic, minced (a full truck-stop dose)
- 4 tbsp butter + 2 tbsp olive oil
- 2 tbsp flour or rice flour
- ½ tsp paprika + ¼ tsp cayenne
- Juice of ½ lemon
- 2 scoops rice per plate, mandatory
Method
- Toss the Shrimp with the flour, paprika, cayenne, and ½ teaspoon salt — the light dusting builds the crust that holds the garlic butter.
- Melt half the butter with the oil over medium-high and sear the Shrimp 90 seconds per side until golden. Remove.
- Drop the heat, add the remaining butter and ALL the garlic, and cook gently 90 seconds — golden and nutty, never brown; truck rules.
- Return the Shrimp, toss through the garlic butter, and finish with lemon.
- Serve over two scoops of rice with every drop of pan butter poured on top. Napkins: several. Regrets: none.
