Method

  1. Sear the Spam slices in a dry skillet over medium until browned and crisp-edged on both sides.
  2. Add the soy sauce, sugar, and mirin to the pan and let it bubble into a glaze, turning the slices until lacquered and glossy.
  3. Rinse the empty Spam tin, line it with plastic wrap, and press in a layer of rice — the tin is the traditional mold, and it's exactly the right size.
  4. Unmold the rice block, top with a glazed slice, and wrap a nori strip around the middle, sealing the end with a damp finger.
  5. Repeat, sprinkling furikake between rice and Spam if you like. Serve warm or pack for the beach.
