Ingredients
- 4 eggs
- 4 corn tortillas
- 1 cup salsa roja
- 1 cup salsa verde
- 1 cup refried beans, warmed
- ⅓ cup crumbled queso fresco
- 3 tbsp neutral oil
- ¼ cup cilantro leaves
- Salt
Method
- Warm both salsas in separate small pans over low heat — the whole dish is a tale of two temperatures, and cold salsa ruins the plot.
- Fry the tortillas briefly in 2 tablespoons of oil until leathery-crisp, 30 seconds per side, and drain. Overlap two on each plate.
- Fry the eggs in the remaining oil until the whites are set and the yolks still tremble, about 3 minutes, seasoning as they cook.
- Set two eggs on each plate's tortillas. Spoon salsa roja over one egg and salsa verde over the other, keeping a strip of refried beans between them as the peacekeeper.
- Finish with queso fresco and cilantro and serve while the yolks still run.
