Method

  1. Soften the onion in the lard over medium until translucent — golden is fine, brown is a different dish.
  2. Add the Banana Peppers and cook 8–10 minutes until slumped, then the tomatoes with salt and sugar. Simmer until the juices go saucy and bright.
  3. Pull the pan off the heat for a moment and stir in the paprika; off-heat is the Hungarian insurance policy against scorched, bitter paprika.
  4. Make wells and crack in the Eggs. Cover and cook over low 4–6 minutes: whites set, yolks still molten.
  5. Serve from the pan with bread for wiping it clean.
