Ingredients
- 4 Eggs
- 4 Banana Peppers, sliced into rings
- 3 ripe tomatoes, chopped
- 1 onion, sliced
- 2 tbsp lard or oil
- 2 tsp sweet Hungarian paprika
- Pinch of sugar
- Salt
- Crusty white bread, for serving
Method
- Soften the onion in the lard over medium until translucent — golden is fine, brown is a different dish.
- Add the Banana Peppers and cook 8–10 minutes until slumped, then the tomatoes with salt and sugar. Simmer until the juices go saucy and bright.
- Pull the pan off the heat for a moment and stir in the paprika; off-heat is the Hungarian insurance policy against scorched, bitter paprika.
- Make wells and crack in the Eggs. Cover and cook over low 4–6 minutes: whites set, yolks still molten.
- Serve from the pan with bread for wiping it clean.
