Ingredients
- 2 lb potatoes, scrubbed
- 4 eggs
- 6 oz smoked sausage, sliced into coins
- 1¼ cups sour cream
- ¼ cup milk
- 2 tbsp butter, plus more for the dish
- 1 tsp sweet Hungarian paprika
- Salt and black pepper
Method
- Boil the potatoes whole in salted water until just tender, about 20 minutes. Hard-boil the eggs alongside for 10 minutes. Cool both enough to handle, then peel and slice into rounds.
- Whisk the sour cream with the milk, paprika, salt, and pepper into a pourable blanket.
- Butter a baking dish and layer: potatoes, egg slices, sausage coins, a drizzle of the sour cream mixture — then repeat, ending with potatoes and the rest of the cream on top.
- Dot with butter and bake at 375°F (190°C) for 35–40 minutes until burnished and bubbling at the edges.
- Rest 10 minutes before cutting so the layers hold their composure.
