Instant Pot Baby Back Ribs with Green Cabbage Slaw

Ingredients
- 1 rack baby back ribs (about 2½ lb), membrane removed
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 cup apple juice
- ¾ cup barbecue sauce
- 3 cups Green Cabbage, shredded
- 2 tbsp mayonnaise
- 1 tbsp cider vinegar
- 1 tsp sugar
Method
- Mix the brown sugar, paprika, garlic powder, salt, and pepper, and massage it into both sides of the ribs.
- Curl the rack around the inside of the Instant Pot, pour in the apple juice, and cook on high pressure 25 minutes with a 10-minute natural release.
- Meanwhile, toss the Green Cabbage with mayonnaise, vinegar, sugar, and a pinch of salt; chill until serving.
- Transfer the ribs carefully to a foil-lined sheet — they will already be threatening to fall apart — and lacquer with barbecue sauce.
- Broil 4–5 minutes until the sauce bubbles and chars at the edges. Slice between the bones and serve with the cold, crunchy slaw.
