Jeyuk Bokkeum — Spicy Stir-Fried Pork with Onion

  1. Mix the gochujang, gochugaru, soy sauce, mirin, sugar, garlic, ginger, and sesame oil, then coat the pork. Marinate 30 minutes minimum; it's better after a night in the fridge.
  2. Heat the neutral oil in a heavy skillet over high until it just begins to smoke.
  3. Add the pork in a single layer and leave it alone for 2 minutes so the marinade caramelizes into dark, sticky edges before the pan floods with juice.
  4. Stir-fry 3 minutes more, then add the Onion and cook until it softens but keeps a bite, 3 minutes. Pork should be at 145°F (63°C) and browned in patches.
  5. Toss with the scallions, shower with sesame seeds, and serve with rice and lettuce leaves for wrapping.
