Spiced Lamb Kofta with Yogurt

Ingredients
- 1 lb ground Lamb
- 1 onion, grated and squeezed dry
- 3 cloves garlic
- 1 tsp cumin + 1 tsp coriander + ½ tsp cinnamon
- Big handful parsley and mint, chopped
- ½ cup yogurt + 1 clove garlic + lemon (sauce)
- Flatbread, sumac onions
Method
- Knead the ground Lamb with the grated onion, garlic, spices, herbs, and salt for a minute so it turns tacky — that's what keeps kofta juicy and holds its shape.
- Shape into logs around the meat. Chill 15 minutes if you have time.
- Sear in a hot oiled pan (or grill), turning, until charred outside and just cooked through, 10–12 minutes.
- Stir garlic and lemon into the yogurt. Serve the kofta on flatbread with the sauce and sumac-dusted onions.
