Method

  1. Knead the ground Lamb with the grated onion, garlic, spices, herbs, and salt for a minute so it turns tacky — that's what keeps kofta juicy and holds its shape.
  2. Shape into logs around the meat. Chill 15 minutes if you have time.
  3. Sear in a hot oiled pan (or grill), turning, until charred outside and just cooked through, 10–12 minutes.
  4. Stir garlic and lemon into the yogurt. Serve the kofta on flatbread with the sauce and sumac-dusted onions.
