Ingredients
- 1 lb Ground Beef, formed into 4 patties
- 4 eggs
- 3 cups cooked rice, hot
- 8 oz mushrooms, sliced
- 2 tbsp butter
- 2 tbsp flour
- 1½ cups beef or mushroom stock
- 1 tbsp soy sauce
- Scallion, sliced, to finish
Method
- Season the patties hard with salt and pepper and sear in a hot skillet, 3–4 minutes a side, until browned and cooked through. Set aside; leave the drippings.
- Add the butter and mushrooms to the pan and cook until deeply browned, 4–5 minutes.
- Sprinkle in the flour, stir 1 minute, then whisk in the stock and soy sauce. Simmer until the gravy coats a spoon, 2–3 minutes, scraping up every browned bit.
- Fry the eggs sunny side up in a separate pan — the yolk is structural; it becomes part of the sauce.
- Stack: hot rice, patties, a flood of mushroom gravy, then the eggs on top. Scatter with Scallion and serve with a spoon — forks miss too much gravy.
