- 'Lomi' means massage: work the flaked Salmon, tomatoes, and onions together with clean hands, pressing gently so the tomato juices and fish marry into their own dressing.
- Season with salt to a gentle brine level — this dish leans salty by design; it partners rich luau food.
- Fold in the scallions.
- Chill thoroughly, then stir a little crushed ice through just before serving — lomi lomi is eaten COLD, almost slushy at the edges.
