  1. Get a wok or wide pan blazing hot. Sear the Steak strips hard in oil, in batches, so they brown instead of steam. Set aside.
  2. Flash-fry the onion and ají to keep them crisp, add garlic, then the tomatoes just to warm.
  3. Return the Steak, pour in soy sauce and vinegar down the hot pan so it sizzles into a glaze, and toss 30 seconds.
  4. Fold in the fries and cilantro right at the end so they stay crisp. Serve with rice — yes, carbs on carbs, that's the dish.
