Steak Lomo Saltado

Ingredients
- 12 oz Steak, sliced into strips
- 1 red onion, in thick wedges
- 2 tomatoes, in wedges
- 1 ají amarillo (or 1 tbsp paste)
- 3 tbsp soy sauce + 2 tbsp red wine vinegar
- 2 cloves garlic
- Big handful cilantro
- Fries (fresh or oven), and rice to serve
Method
- Get a wok or wide pan blazing hot. Sear the Steak strips hard in oil, in batches, so they brown instead of steam. Set aside.
- Flash-fry the onion and ají to keep them crisp, add garlic, then the tomatoes just to warm.
- Return the Steak, pour in soy sauce and vinegar down the hot pan so it sizzles into a glaze, and toss 30 seconds.
- Fold in the fries and cilantro right at the end so they stay crisp. Serve with rice — yes, carbs on carbs, that's the dish.
