Method

  1. Heat the oven to 475°F (245°C) with a sheet pan or stone inside.
  2. Stir the za'atar and olive oil into a loose green paint.
  3. Stretch the dough into rounds (or use the pitas), and spoon the za'atar oil over, spreading to the edge with the spoon's back — generously; pale manoushe is a missed opportunity.
  4. Bake 7–9 minutes until the rim bronzes and the center bubbles (pitas: 4–5 minutes).
  5. Fold like a taco around cucumber, tomato, and mint, or eat flat with olives alongside. Lebanon queues at bakeries for this every morning — the queue was right.
