Massaman Beef Curry

Ingredients
- 1½ lb Beef, cubed
- 3 tbsp massaman curry paste
- 1 can (14 oz) coconut milk
- 2 potatoes, chunked
- 1 onion, wedged
- ½ cup roasted peanuts
- 1 tbsp fish sauce + 1 tbsp tamarind + 1 tbsp palm sugar
- Jasmine rice
Method
- Fry the curry paste in the thick top-of-the-can coconut cream until fragrant and split.
- Add the Beef to coat, then the rest of the coconut milk, potatoes, onion, and peanuts. Simmer gently 35 minutes until the Beef is tender.
- Balance the sauce with fish sauce, tamarind, and palm sugar — massaman rides a salty-sweet-sour line.
- Serve over jasmine rice with extra peanuts.
