  1. Fry the curry paste in the thick top-of-the-can coconut cream until fragrant and split.
  2. Add the Beef to coat, then the rest of the coconut milk, potatoes, onion, and peanuts. Simmer gently 35 minutes until the Beef is tender.
  3. Balance the sauce with fish sauce, tamarind, and palm sugar — massaman rides a salty-sweet-sour line.
  4. Serve over jasmine rice with extra peanuts.
